Swiss sausage salad is a typical part of a Bavarian Brotzeit, often enjoyed in a beer garden. Traditionally, Wurstsalat is made with "Regensburger", a short, thick, smoked German sausage made from coarsely ground pork. However, Regensburger sausages can often be difficult to find, so German-style bologna sausage makes a good substitute. Without the Emmental cheese, it is known as Bavarian sausage salad.
Ingredients
- 400 g German-style bologna sausage
- 200 g Emmental cheese (in one block)
- 200 g gherkins
- 100 ml pickle juice
- 1 onion (red)
- 2 sprigs parsley
- 1 tbsp mustard
- 2 tbsp oil
- 50 ml vinegar
- salt
- black pepper
Instructions
- Halve the onion and cut it into thin slices.
- Cut the Fleischwurst into strips about 1 cm wide.
- Cut the gherkins into strips about 1 cm wide.
- Cut the Emmental cheese into strips about 1 cm wide.
- Stir the mustard into the vinegar, then add the pickle juice and oil. Season with salt and black pepper.
- Pour the marinade over the onion, German-style bologna sausage, gherkins and Emmental cheese and mix everything well.
- Leave to marinate for at least 30 minutes, stirring occasionally.
- Finally, mix in the parsley leaves.
