Watermelon Curry

 

Watermelon curry is a fruity curry that combines the natural sweetness of watermelon with the heat and aromatic spices of a traditional curry.

Despite the sweetness of the watermelon, it remains relatively moderate in calories because most of the fruit is water. The coconut milk contributes the majority of the fat and saturated fat, while the watermelon, tomatoes, and spices provide a good amount of vitamin C and antioxidants.

Ingredients

  • 1 cup rice
  • 1.5 kg watermelon
  • 400 ml coconut milk
  • 200 g chopped tomatoes
  • 1 red onion
  • 2 cloves garlic
  • 1 ginger (about the size of a walnut)
  • 1 tbsp tomato paste
  • 1 tbsp red curry paste
  • 1 tbsp fenugreek leaves (optional)
  • 1 tbsp ground cumin
  • 3 stalks coriander (fresh)
  • 1 lime (juice)
  • 2 tbsp oil (for frying)

Instructions

  1. Wash the rice and cook it according to the package instructions.
  2. Dice the onion finely and grate the garlic and ginger.
  3. Sauté the onion, garlic, ginger, tomato paste and red curry paste in a little oil over medium heat.
  4. Add the chopped tomatoes, fenugreek leaves and ground cumin, then cook for another 2–3 minutes.
  5. Pour in the coconut milk and continue cooking for about 5 minutes.
  6. Meanwhile, cut the watermelon into cubes of about 2 cm.
  7. Blend about one fifth of the watermelon into a juice or purée using a hand blender , add it to the curry and simmer for about 10 minutes.
  8. Finely chop the coriander, reserving a few leaves for garnish, and stir it into the curry.
  9. Add the remaining watermelon cubes, coat them with the curry sauce and gently heat for about 10 minutes.
  10. Add the juice of a lime.
  11. Serve the curry with rice.
