Bruschetta con Pomodoro

 

Bruschetta con Pomodoro is a refreshing appetizer for warm summer evenings and quick to prepare.

Bruschetta derives from the Italian word »bruscare«, which roughly means »to roast over the fire«. The simplest version is toasted bread that is still warm, rubbed with fresh garlic and drizzled with a little olive oil. In addition, there are various topping variations, the most well-known is probably the one with a mixture of fresh tomatoes, onions and basil. When choosing tomatoes, make sure they are ripe and flavorful. For the baguette, I used sourdough baguette.

Ingredients

  • 1 baguette
  • 200 g tomatoes
  • 50 g basil leaves (fresh)
  • 1 onion (red)
  • 1 clove garlic
  • pepper
  • salt

Instructions

  1. Cut the baguette, which can preferably be one day old, into slices about 1.5 cm thick, drizzle with a little olive oil and toast for about 7 minutes on a baking tray in the oven at 200°C.
  2. Meanwhile, cut the tomatoes and remove the seeds and green stems. Then dice them into small cubes and place them into a bowl. Lightly salt them. If the tomato skins are quite tough, place them in boiling water for about 30 seconds beforehand and remove the skin.
  3. Finely chop the onion and add it to the tomatoes.
  4. Wash and roughly chop the basil leaves, add them to the tomatoes and onion, mix everything well and let it rest until the baguette is toasted.
  5. Peel the garlic clove and rub the still warm toasted baguette with it. The bread should absorb the flavor of the garlic.
  6. Afterwards, drain the liquid from the tomatoes and distribute the topping over the baguette slices.
  7. Garnish with basil leaves and serve.
