Galette Bretonne – a traditional dish from Brittany.
Ingredients
- 250 g buckwheat flour
- 200 ml milk
- 300 ml water
- 2 size M eggs
- 50 g butter (melted)
- 1 broccoli (medium)
- 1 red onion
- 2 cloves garlic
- 400 g chicken breast
- 2 tbsp flour
- 300 ml cooking cream
- 100 g baby spinach
- 250 g grated cheese (for gratin)
- oil for frying
- nutmeg
- black pepper
- salt
Instructions
- Mix the buckwheat flour, milk, water, melted butter, eggs, and salt into a fairly thin batter and let it rest for 30–45 minutes.
- Wash the broccoli, cut it into small florets, blanch in salted water, and rinse with cold water.
- Cut the chicken breast into small pieces, coat lightly in flour, and fry until browned.
- Slice the onion into thin strips and finely grate the garlic.
- Once the batter has rested, heat some oil in a pot and sauté the onion and garlic.
- Then add the broccoli, chicken, and cooking cream and bring to a boil.
- Add the spinach and grated cheese and season with salt, pepper, and nutmeg.
- Heat a pan over medium-high heat and add a little oil.
- Pour a ladle of batter into the pan and swirl to spread evenly.
- Once the underside is browned, flip the galette.
- When cooked on both sides, set aside on a plate. Repeat with the remaining batter.
- To serve, place a galette on a plate, add the filling in the center, and fold the sides inward.
