Chicken Breast with Mustard Sauce

 

Chicken breast with mustard sauce is a quick and delicious meal. It is delicious served with rice, pasta or simply a fresh baguette.

Dijon mustard is recommended for this recipe. I used 3 tablespoons of Dijon mustard and 1 tablespoon of honey mustard.

  • 400 g chicken breast fillet (2 pieces)

Instructions

  1. Preheat the oven to 180°C.
  2. Finely chop the onion and garlic.
  3. Sear the chicken breasts on both sides in a pan over high heat.
  4. Transfer the browned chicken breasts to a small baking dish .
  5. Reduce the heat and sauté the onion and garlic in the same pan.
  6. Whisk together the cooking cream, crème fraîche and mustard until smooth using a whisk .
  7. Deglaze the onions and garlic with the Cognac. Most of the alcohol evaporates during this step and the remainder cooks off almost completely in the oven.
  8. Add the sauce and bring it briefly to a simmer. Season with salt and pepper.
  9. Pour the sauce over the chicken breasts.
  10. Finish cooking in the preheated oven at 180°C fan-assisted for about 20–25 minutes.
  11. Serve with rice, pasta or bread and sprinkle with freshly chopped wild chives.
