Pasta with sliced chicken, chanterelles and green pepper in a cream sauce.
The dish tastes best with fresh chanterelles, but canned or jarred chanterelles can also be used. The same applies to the green pepper.
Ingredients
- 300 g chicken breast fillet
- 50 g flour (wheat)
- 500 g pasta (Fusili Lunghi Bucati)
- 160 g chanterelles
- 30 g green pepper
- 250 ml cooking cream
- 100 ml white wine (optional)
- 1 onion
- 1 clove garlic
- 50 g parsley
- 2 tsp paprika (hot)

Instructions

Bring water to a boil in a large
pot and salt generously.
- Slice the onion and finely grate the garlic.
- Chop the parsley, finely chopping the stems and leaving the leaves coarser.
- Cut the chicken into pieces and coat them in flour.
- Add the pasta to the boiling salted water.

Sear the chicken pieces in a
pan over high heat.
- Add the onion, garlic and chanterelles and fry for about 2 minutes.
- If using the white wine, deglaze with the wine now.
- Add the cooking cream, then the green pepper and parsley.
- Cook over low heat until the pasta is ready.
- Add the pasta to the pan and mix with the sauce. Add some pasta water if necessary in case the sauce is not creamy enough.
