Zucchini ham rolls are perfect as part of Italian antipasti or an apéro platter.
The zucchini ham rolls can be enjoyed warm or cold.
Ingredients
- 1 zucchini
- 100 g ham (e.g. turkey breast)
- 125 g Emmental cheese (sliced)
- 1 clove garlic
- 100 ml olive oil
- 100 g breadcrumbs
- 50 g Parmesan
- pepper
- salt
Instructions
- Preheat the oven to 180°C top and bottom heat.
- Wash the zucchini and cut it lengthwise into thin slices.
- Mix the finely grated garlic, salt, pepper, and oil into a marinade.
- Combine the breadcrumbs with the finely grated Parmesan.
- Brush both sides of the zucchini slices with the marinade and coat them in the breadcrumb-Parmesan mixture.

Then top with Emmental cheese and ham, roll them up, and place them into a
baking dish .
- Finally, pour the remaining marinade and breadcrumb-Parmesan mixture over the rolls.
- Bake in the oven for about 25–30 minutes.
