Zucchini Ham Rolls

 

Zucchini ham rolls are perfect as part of Italian antipasti or an apéro platter.

The zucchini ham rolls can be enjoyed warm or cold.

Ingredients

  • 1 zucchini
  • 100 g ham (e.g. turkey breast)
  • 125 g Emmental cheese (sliced)
  • 1 clove garlic
  • 100 ml olive oil
  • 100 g breadcrumbs
  • 50 g Parmesan

Instructions

  1. Preheat the oven to 180°C top and bottom heat.
  2. Wash the zucchini and cut it lengthwise into thin slices.
  3. Mix the finely grated garlic, salt, pepper, and oil into a marinade.
  4. Combine the breadcrumbs with the finely grated Parmesan.
  5. Brush both sides of the zucchini slices with the marinade and coat them in the breadcrumb-Parmesan mixture.
  6. Then top with Emmental cheese and ham, roll them up, and place them into a baking dish .
  7. Finally, pour the remaining marinade and breadcrumb-Parmesan mixture over the rolls.
  8. Bake in the oven for about 25–30 minutes.
