Green Asparagus on Feta Cream

 

Green asparagus on feta cream can be served either as a starter or as a main course.

I really like garlic, but since it is used raw in this dish, one should be careful because it can quickly become unpleasantly pungent.

Instructions

  1. Cut the baguette into slices about 3 cm thick, brush them with 1 tbsp olive oil, and toast them in the oven at 180°C for about 8 minutes.
  2. Crumble the feta and blend it together with the yogurt, sun-dried tomatoes, tomato paste, and garlic in a bowl using an immersion blender until creamy. Season with black pepper.
  3. Wash the asparagus, trim the ends, and fry it in a pan over medium heat with 1 tbsp olive oil.
  4. Arrange on a plate and sprinkle with chili flakes. I still had some glazed diced onions left over, which I added as well.
