Green asparagus on feta cream can be served either as a starter or as a main course.
I really like garlic, but since it is used raw in this dish, one should be careful because it can quickly become unpleasantly pungent.
Instructions
- Cut the baguette into slices about 3 cm thick, brush them with 1 tbsp olive oil, and toast them in the oven at 180°C for about 8 minutes.
-
Crumble the feta and blend it together with the yogurt, sun-dried tomatoes, tomato paste, and garlic in a
bowl using an
immersion blender until creamy. Season with black pepper.
-
Wash the asparagus, trim the ends, and fry it in a
pan over medium heat with 1 tbsp olive oil.
- Arrange on a plate and sprinkle with chili flakes. I still had some glazed diced onions left over, which I added as well.
