Œufs Mimosa are an appetizer that can be found on the menu of each Brasserie in Paris.
Instead of mayonaise I like to use Miracel Whip, as it is more aromatic and has a lot less fat than mayonaise.
Ingredients
- 6 eggs
- 1 EL Miracel Whip
- 1 TL mustard (honey mustard)
- 1 TL lemon juice
- parsley (optional for decoration)
- chili flakes
- salt
- black pepper
Instructions
- Hard boil the eggs.
- With a sharp knife cut them lengthwise, so that the egg white is not damaged.
- Create a cream from the egg yolks, the mustard, the lemon juice and the Miracel Whip with a spoon, season it with salt and black pepper.
- Fill the egg whites with the cream and garnish them with chili flakes and parsley.
