Œufs Mimosa

 

Œufs Mimosa are an appetizer that can be found on the menu of each Brasserie in Paris.

Instead of mayonaise I like to use Miracel Whip, as it is more aromatic and has a lot less fat than mayonaise.

Ingredients

  • 6 eggs
  • 1 EL Miracel Whip
  • 1 TL mustard (honey mustard)
  • 1 TL lemon juice
  • parsley (optional for decoration)
  • chili flakes
  • salt
  • black pepper

Instructions

  1. Hard boil the eggs.
  2. With a sharp knife cut them lengthwise, so that the egg white is not damaged.
  3. Create a cream from the egg yolks, the mustard, the lemon juice and the Miracel Whip with a spoon, season it with salt and black pepper.
  4. Fill the egg whites with the cream and garnish them with chili flakes and parsley.
