White asparagus with beef sirloin and new potatoes
Ingredients
- 250 g beef sirloin (2 pieces)
- 10 spears asparagus (white)
- 8 small potatoes
- 50 g parsley
- 1 sprig rosemary
- 2 garlic cloves
- 1 tbsp vegetable oil
- 1 tbsp clarified butter
- 30 g butter (cold)
- 3 tbsp lemon juice
- 1 pinch sugar
- salt
- black pepper
Instructions
- Peel the asparagus and trim off the ends. Keep both.
- Scrub the potatoes well, leaving the skin on.
- Finely chop the parsley.
- Bring water to a boil in a pot. The pot should be tall enough so that about 2/3 of the asparagus is submerged in the water. Add the lemon juice, about 10 g of butter, a pinch of salt and a pinch of sugar, the asparagus trimmings and peel, and the asparagus spears, then cook for about 15 minutes over reduced heat.
- Bring water to a boil in a second pot, add salt and the potatoes, and cook for about 15 minutes.
- In a pan with the clarified butter, sear the two beef sirloins on both sides over high heat, then add the two crushed garlic cloves, the rosemary sprig, and the remaining 20 g of butter.
- Using a spoon, repeatedly baste the meat with the melted butter.

Then wrap the meat in
aluminum foil and let it rest until the asparagus and potatoes are done.
- Arrange everything on a plate, drizzle the asparagus and potatoes with the remaining butter from the pan, and garnish with parsley.
